Andrew has made his way across international borders, working in some of the most renowned kitchens in the culinary world. From catering to Richard Branson’s guests on Necker Island to Head Chef at the seven-star Emirates Palace in Abu Dhabi, Andrew brings his own distinctive style and passion for delivering beautifully, yet simply prepared food to Perth’s best wood-fired grill restaurant, Ascua.

Your typical ‘aussie bloke’ with the palette of a Michelin star restaurant inspector and the produce knowledge of a country farmer, Nick brings to the plate everything Australians love to eat. Beer-lover and father of twins, Nick enjoys cooking wholesome, creative dishes that bring people together. His distinctive culinary style blends modern Australian cuisine with classic European traits using local and seasonal ingredients. You’ll see his culinary style shine through Ascua’s wood-fired grill menu.

Inspired by the words of Mahatma Gandhi, “The best way to find yourself is to lose yourself in the service of others'', Pierre loves to make people feel special by offering them a unique experience. Born into an old winemaker family, his childhood has inspired his passion for wine and great dining experiences. Pierre has carefully selected the beverages you’ll see on Ascua. Each wine, beer and liquor has been hand-picked to complement the Ascua’s a la carte menu. Allow our specialised team to recommend the perfect wine pairing for you.

The aptly named Heno & Rey (translating to Hay & King) is your reinterpreted tapas bar. The place to meet a for a jug of fruity Sangria, sample fresh locally caught seafood from the raw bar, enjoy a plate of charcuterie or graze on more generous dishes with a glass or two of the finest Western Australian wines.
