Chef Nick Trezise


Chef Nick Trezise is a child of the Great South West region, and as such is a passionate ambassador of the abundant produce that Pemberton, his home-town, supplies to the culinary industry in WA and the rest of world.

Having worked in institutions whose names demand great respect, in Australia and abroad, Nick has a strong appreciation for the cuisine favoured on his home turf, with a sprinkling of international spice to keep things interesting.

Your typical ‘aussie bloke’, with the palette of a Michelin restaurant inspector and the produce knowledge of a country farmer – Nick Trezise is bringing to the plate everything Australians love to eat.

Work History

Humble beginnings in WA favourite, Karri Valley Resort marked the starting point for a very successful career for soon-to-be-father-of-twins, Chef Nick Trezise.

At 20 years old Nick was apprentice to Hall of Fame chef, Chris Taylor, at Fraser’s Restaurant. Garnering skills, knowledge and exhibiting innovation in his field, he was appointed the Chef de Partie of yet another iconic venue in Perth – The Old Brewery. Looking to flex his gastronomic muscles, Nick relocated to cosmopolitan London. Here he earned a senior position at Dean Street Townhouse, based in the aristocratic heart of Soho.

A taste for the upscale still in his blood, Nick was lured to the stunning Mandarin Oriental Hyde Park in London. One of the world’s most iconic and familiar buildings, the Mandarin instilled in Nick a sense of luxury that will span his entire career.

Bar Boulud, the only London restaurant of Michelin-starred chef, Daniel Boulud, was Nick’s home for two years, Nick worked as a senior member of the kitchen, specialising in the meat and seafood side of the menu, of which he helped master.

Returning to Perth in 2015, Nick ran the gauntlet of high profile venues in the City, cooking up a storm in kitchens such as Printhall and Post. In 2016 Nick had the opportunity to experience the concept creation and birth of restaurant Nic & Kolo, an Applecross favourite, which was voted into the top 10 breakfast cafes in Perth.
